pork chops & rice
This time it really was like last night's dinner and a little bit from the night before, more peach cobbler. Yumm. Good thing the peaches are gone.

I know it looks a lot like last night's dinner, but really it was different. I promise.

burgers and dogs
This summer we have switched from hamburgers to turkey burgers. It's a little leaner and still good although I do give it a good dousing with Worchestershire sauce during grilling. I also had the last of the tomatoes from our old yard. I'll have to get more from GrandDad.

tomato cheese sandwich
Tomatoes from my yard. Yummy. We picked the few tomatoes that grew before we left the house and they have finished ripening in my kitchen window. Still very yummy. I have bacon in the fridge, but didin't want to take time to fry it up. More sandwiches Monday.

pizza
It's been awhile since I posted our dinners here. We have had a few crazy weeks of moving and traveling and... and... so we ate a lot of hamburgers and hot dogs, and a lot of what John calls "Mormon Food" during our family reunion in Utah and Idaho. My in-laws are back in town so we had several dinners with them. It's all good and life is getting back to the new normal.

I've missed a few days and tried to play catch up. I don't remember all of them, but it's close.

Encha-lasagna
layers of tortillas and a combo of black beans, corn, peppers, and onion all smothered in a mild green enchilada sauce. Tasty.
Chicken apricot tangine

roasted chicken
I actually roasted a wholel chicken. I don't think that I have ever done this before. I don't know why. It wasn't hard. I just stuffed some lemons and fresh thyme in the cavity and under the skin and baked at 250 for 90 minutes and then finished it up at 350 for 40 minutes more. My plan was to do 250 and 1/2 hour per pound, but I ran out of time.
One night in RS I learned about the long slow method for roasting turkey, 250 degrees and 1/2 hour per pound. You don't need any special seasoning or treatment just the bird, roasting breast down. The only down side to this method is that you don't get any drippings to speak of. That is OK because it all stays in the meat for a juicy tid bit.
Spring is here and the fresh fruit has turned from oranges to strawberries. YUM!

The 2009 dinner tally
Here's the list of everything that showed up more than once. There were a few days I forgot to keep track, but this gives you a pretty good idea of what we ate for dinner over the past year. It is a reasonable reflection of what we ate but there are a few things that aren't clear from the list. We eat out a lot more than just the OUT entry, at least once a week, up to three times. Some of the pizza, chicken kabobs, and BBQ pork sandwiches were eaten out, but not all. The chicken salad w/ mandarin oranges always came from Wendy's. The braised tofu with mushrooms came from the same place as the Chinese takeout. The pork chops and pasta are each from probably 2 or 3 different recipes and the pasta is a variety of shapes and sizes usually with a tomato sauce, but not always. Some of the most memorable one time dinners were the cioppino and crab on Christmas Eve and the duck, duck, goose on Christmas day, the yummy Thai curries we ate to celebrate our anniversary, and of course the corned beef and cabbage on St. Patrick's day. Memorable, but not desirable, was the dinner of Gatorade.
